Hello, all! š«¶š¼ How are you? š¤Ā I hope youāre enjoying the weather wherever you may beāitās been much warmer here lately, and Iāve been so glad for that! āŗļøš©·
Today I thought Iād share a recipe with you all, one my family tried for the first time just the other day! As weāre nearing the end of the cold seasons, but still not quite there, I know you all need something cozy and light to get you through to spring. šš¤ And these are just that! š¤¤šš
Ā
Earl Gray Muffins
š«š§š©¶š
Ā
Ingredients
š¾One and a half cups wheat flour
š¤ Three-fourths cup brown sugar
š§One half tsp. salt
š¤Two tsp. baking powder
š„„One-third cup coconut oil, or your preferred oil
š„One egg
š¼One-third cup milk or yogurt-I recommend yogurt š
š«One cup blueberries, fresh if possible
āTwo or three teabags of earl gray tea, any quality
Ingredients for crumble
š¬One-half cup sugar
š§One-third cup flour
š§One-fourth cup butter, cubed
ā¤ļøOne and a half tsp. cinnamon
Instructions
For the crumble, mix all of its ingredients and press together and poke at with a fork until you have many little clumps. Preheat oven to 400 degrees. Combine all of the dry muffin ingredients together in a bowl, pouring the contents of the tea bags straight in. If your tea leaves are chunky, you may want to grind them up small. Separately, combine all the wet ingredients. Mix the two together before folding in the blueberries. Pour into muffin pan and sprinkle crumble over top. Bake for 20-25 minutes! š©·
And of course, also be sure to brew a cup of tea for yourself to enjoy alongside your muffin. šāØ And grab a book while youāre at it! š We enjoyed these together in celebration of my being newly published, and brewed ourselves London Fogs to go along with them. š©· It was so special! š„¹š„°
Thatās all for now! š«¶š¼ I hope you all have a wonderful day, and definitely let me know if you try out this recipe, and if you do, what you think! šš„°
